Quick and Easy Chocolate Chip Muffins



I love recipes that can be made in one bowl and produce hardly any washing up afterwards. Let's face it - who doesn't?! Especially where kids are involved.

This quick and easy recipe does just that. Everything is mixed together in the bowl of a free standing mixer, and then divided into cake cases.

The hardest part will be getting the kids to put the chocolate in the muffins instead of their mouths!



Just one word of advice when making muffins: don't over mix them as they can turn out dense rather than light and fluffy.



If you manage to hide these from the kids then they should last 2-3 days in an airtight container.

In the very rare event that there are any left after 3 days, I put them back in the oven at 150oC for 7-10 minutes to refresh them.
