These cookies are The Best Vegan Chocolate Chip Cookies you will ever make!
You're thinking that bloggers always say that, but these really are! My repeat customers will testify to their yumminess.
I think it's important that vegan bakes taste fantastic, just like their nonvegan counterparts. This recipe has been tried and tested many times to make sure you only have the best cookies.
Tips for making this recipe
The cookie balls have to go in the freezer before baking. I can't emphasise how important this step is. If you don't they will spread all over the baking tray, forming one giant cookie, and they will spill over onto the bottom of the oven, thus giving you the horrible job of having to clean the oven!
There are lots of brands of vegan chocolate around so it's easier to use the type you prefer. I use buttons that I give a rough chop to, unless you want a big chunk of dark chocolate.
If you don't want to use chocolate they work great with crumble up lotus biscuits mixed in. Or change the sugar to light brown sugar to give a more caramel flavour.
Everything goes into one bowl so there's barely any washing up (unless you try to bake them without freezing the dough first, have I mentioned that step?!).
